Freeze Dryer Settings

Candy Mode on your Harvest Right Freeze Dryer. Run for at least 12 hours at 150 degrees. Do NOT tray warm or you run the risk of the gummy candies getting too big and sticking to the bottom and sides of the freeze dryer. Mats are not necessary, but could be helpful in quicker post processing.

Machine Temperature: 150°F

No Mats

Run time: 12 - 16 hours

Prep

Simply put them on the trays with about 1 inch of space between each item. There are many suggestions out there to stretch them or use foil on the sides of your freeze dryer to keep the heat consistent, but we didn't see a need for that.

Post Processing

Simply remove from the tray and store in mason jars, mylar bags, or other airtight containers.

Suggested Storage

Oxygen absorbers and silica should not be necessary for most candies unless required by your particular state State if selling commercially. Some think that moisture absorbers are better for freeze dried gummy candies.
